PREPARATION:
Step 1:
Cook the ground beef, along with the chopped onion and green pepper, in a large pan over medium-high heat until the meat is no longer pink.
Step 2:
Combine the water and taco seasoning in a large mixing bowl, and cook the mixture for one minute on low heat.
Step 3:
After that, add the drained black beans and the undrained Mexican tomatoes and combine well, and cook everything for about 10 minutes on low heat.
Step 4:
At this step, you need to heat the oven to 350 degrees Fahrenheit. And prepare a 9 x 13-inch baking dish by greasing it and placing two tortillas in the bottom of the dish.
Step 5:
Cover the tortillas with half of the refried beans and fold them in half, then top with half of the meat mixture. Then, on top of the meat mixture, add 1 cup of shredded cheese.
Step 6:
Continue layering until you reach the last layer of tortillas and the final cup of cheese.
Step 7:
Bake for approximately 25 minutes, or until the cheese is melted and bubbling, according to your preference. And serve it immediately after adding your favorite toppings.
